Caribou Coffee — a chain of coffee shops based in Minnesota — recently got back to me with additional information on what’s gluten free in their stores. On a particularly chilly day, I emailed Caribou wondering what we gluten-free folks could have if we stopped by their shop. Aaron in Customer Relations says, “Currently all of our coffee and beverages are Gluten Free, unless the drink contains Cookie Crumb topping in or on it. So we become nutrient deficient when we have undiagnosed celiac disease because our gut can’t absorb nutrients — and then some of us stay nutrient deficient after diagnosis because our gluten-free foods are lacking in fiber, protein and other vitamins and minerals. Right now it’s a cycle that one expert wants to stop.

Okay, I’m exasperated. The US Food and Drug Administration was supposed to issue a rule requiring volunteer gluten-free labeling in 2008.
