I stumbled upon a delightful little treat at one of my local grocery stores: little gluten-free shortbreadish cookies.
Dr. Lucy’s cookies are all gluten-free (and free of eggs, dairy, casein, tree nuts, and peanuts). I bought two kinds of cookies: sugar and oatmeal, at my local Rainbow Foods store last week (Rainbow is owned by Roundy’s). I loved the oatmeal. They were slightly chewy (which is what I prefer) with a definite oatmeal cookie taste.
The rest of my family preferred the sugar cookies. They were very crunchy and sugary. Pretty much what a shortbready-style sugar cookie would be like.
I see these as being perfect for a tea, luncheon, bridal or baby shower. There are about 10 – 15 or so per pack so it’s an ideal size if a host is just trying to accommodate one gluten-free person.
I purchased these for around $5.00 per box, but one of my favorite things is that I found them at a big chain grocery store! Good job Rainbow!
