Bringing in an exchange student with celiac disease for nearly a year is a big challenge. We took that on and now it’s about to end. I have found myself asking a lot of questions about the future of my own daughter as soon-to-be teenage celiac, but also about some of the bigger food challenges for Ida while she was here.
